“New Mexico has a very distinct food culture and we draw a lot from that in / shed, but with Juliette we are going to keep it more a-cultural, focusing less on vernacular dishes, but on the abundance of food that is grown/raised around us at any given time. We are excited to create a restaurant that is fun but also nurturing. We are going to be very transparent about the ingredients we use and don't use. We'll only use good salt, avoid seed oils, have grass-fed beef, y mas”
“We will be sourcing from our farm, mostly beef from our Criollo cattle. We are also excited to work with farmers around us that we love on a larger scale, specifically our dear friend Ron Boyd who runs La Villita farm. He will be growing corn and peas for us as well sharing all the excess fruit he has from his orchard. The man, Don Bustos in Santa Cruz, is our chile go to, red and green, but also things like blackberries and more”
